Homestead Chili

Chili is one of my favorite meals to make in the colder months. I fill mine with tons of meat! My red dutch oven makes it that much more beautiful, as a dish.

Recipe:

2 cans of petite cut tomatoes

2 cans of tomato sauce

2 cans of kidney beans (I like one light and the other dark)

2 lbs. of hamburg

1 pepperoni stick

Chili Powder

Garlic

Basil

Italian Seasoning

Salt and Pepper

*Chili Packet (yes, from the store)

Mexican Blend Sprinkle Cheese

Sour Cream

Parsley

Simmer tomatoes, sauce, beans, chili powder, salt, pepper and chili packet in a 5.5 qt. dutch oven, or bigger. Fry hamburg in a large skillet. Add garlic, basil, Italian seasoning and more salt and pepper- all of these are to taste. I like to fry it until it’s a little over done. Drain and add to the chili. Cut pepperoni on the thicker side- I like to quarter mine. Let simmer for about a half hour.

When ready, garnish with sprinkle cheese, sour cream and parsley.

Scrumptious and sure to fill your belly!

*Instead of using a chili packet, sometimes I create my own seasonings with quite a bit of chili powder, cayenne pepper, and the same other ingredients mentioned above. It’s really all about taste- how hot you like it. The packet is quicker, but not quite as healthy.*
