I have been making these muffins for years- many years. They are always so moist and delicious. Everything about them makes me think of breakfast and a hot cup of tea. This time, I wanted to try something new. I’ve been reading about the fact that granulated sugar is really bad for you, and have wanted to try a healthier choice for it. I’ve had a hard time finding something that would work right with my regular recipes, though. I was grocery shopping the other day, and found the perfect kind!! So, I tried this new healthy choice in place of regular granulated sugar, and guess what? It’s delicious! I will be using this from now on- quite a bit more money than the granulated, but so worth it.
These muffins have molasses in them, so they always have a darker hue to them, than a regular blueberry muffin. Oh! They’re so good! You simply have to try them.
I was so anxious to bite into this, knowing that something was going to taste a little, maybe a lot, different. I wasn’t let down one bit! If anything, I like them better than before… Maybe it’s because I know they’re a little healthier for me?
Here it is! The healthy sugar- Coconut Sugar- Pure & Unrefined. It’s the perfect 1:1 ratio for granulated sugar. It’s beautiful, and I have found a new love to my baking.
Look at it’s beautiful, brownish goodness. And it smells amazing! You NEED to try it! I know you’ll love it just like I do.
So, without further due, here’s the recipe:
1 farm fresh egg
1 cup of Coconut Sugar
2 Tablespoons of Molasses
1/2 cup of canola oil
1 cup of whole milk
1 teaspoon of baking soda
1/2 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon of ginger
*2 1/2 cups of flour (I prefer Hodgson Mills natural unbleached white)
1/2 teaspoon of salt
*Heaping cup of blueberries
Heat oven to 350 degrees. Grease 18 muffin cups. Whisk egg with fork in large bowl. Add the rest of the ingredients, except the blueberries.
*If blueberries are frozen, toss them in 1/2 cup of the flour. Add to the mixture. Stir just till moistened.
Bake for about 20- 25 minutes.
Let cool for about 5 minutes. Melt 4 Tablespoons of butter in a small bowl. In another small bowl, about 1/3 cup of Coconut Sugar.
Dunk the top of each muffin in the butter and then the sugar.
Sink your teeth into one (or two) and enjoy!
Blueberries have antioxidants in them, which make them incredibly healthy for you, and they taste delicious to boot!
